My first thought on reading your reply was maybe there was a transcription error. When I started my FH studies abt 6 years ago, I was initially wary of the LatterDay Saints aka FamilySearch site, as many text books etc urged caution with as it was "very prone to transcription errors". However, since then I've used the site a lot and found it very useful indeed, not least because it's so user-friendly and also free. I've also seen several examples of subscription sites such as Ancestry also making transcription errors, some of which truly beggar belief.

However in this instance I've looked up the actual Census image on Ancestry and the entry for William clearly reads "Helps". As to what the Census official heard when he wrote down the name, who knows ?.
The Ancestry site offers other Records which they feel may be linked to William, including the following, at this moment I'm unsure as to if it is definitely your man.

From memory I think this is the same man, thankfully it's a rare surname locally hwoever it's spelt. As the following extracts show, I've looked at several adjacent pages of this 1871 Census trying to find clues to street names etc to find exactly where William lived, hence I accidentally found these other people who maybe related. I'm a little bemused as to why the Census offical hasn't recorded street names, hard to believe but maybe they hadn't been named by then, or even in the 1881 Census, I need to get my old maps out !?. Hence I've highlighted the Inns as they tend to stay put while people move house. (NB the Household Schedule Numbers do NOT relate to physical Street etc numbers, but are merely the order the official visited the houses. This Census runs to 44 pages and over 200 Schedule numbers).

The Nags Head has recently closed, it's just off Church Road, at it's halfway point between the town centre and St John's Church. The Dog Inn is long-closed, it was on the west end of Victoria Street not far from the Nags. The vast majority of occupations recorded in the adjacent Census pages agree with this placement, being colliers or iron foundry workers. Their workplaces were readily located below Church Rd, towards and in the valley of Cinderford Brook which runs south thro' Ruspidge and north thro' Bilson, all as clearly shown on this O.S. map from 1883.

Thanks Don for leading me to the Dog Inn entry because this is an addition to my own researches, regarding the many William Jones in the Forest including several on my paternal line, some of which were innkeepers, and now I've found one in my hometown !.
