I am doing research on the Hiam (Hyam) family of Hartpury. I have become stuck on the main family member with the name Comfort Hiam born c.1800 in Hartpury, also resided in Pauntley, Newent. she was married to Thomas Leighton(Laiten,Layton). if there is any information about her that anybody knows that would be much appreciated.

I don't currently subscribe to Ancestry, but even when I did, my go-to backup site was LDS aka FamilySearch. Despite sometimes having inaccurate transcriptions, and being laborious to copy-across to other documents or webpages, it's always very good at dealing with tricky spelling variations and offering possible alternatives.

In this case I entered "Tho Laiten Newent" and the search immediately gave the following Census which matches the one you found of course.

As it seems likely that Amie already has the later Census transcripts, I won't post them again here, but I will say their info shows perfect agreement with the following PRs from this site's database.
eg the 1871 Census for Thomas showed Thomas senior as a carrier. This is matched by his son Thomas Junior's Marriage Record here, to Selina as per his own 1871 Census.

I checked the Surname in the 1815 marriage and it should read Sysum not Lysum.

GR has mistranscribed in 1851. Comfort’s reported age is misleading too. However, they can be found by searching for Joseph HERBERT (b. 1806 at Oxenhall), shoemaker, who was living next door in 1841. He was still living next door in 1851.

Hi me and a friend has been looking into comfort Hiam/Leighton I know she married Thomas Leighton 1826 in Saint Nicholas in October I also know she died 15th December 1879 as I’ve her death certificate she died of senile decay her daughter in law Harriet reported her dead comfort is my great great great nan Thomas Leighton her son married selina Burlow she’s my great great nan comforts dad was apparently Thomas Hiam and her mum was Ann but no surname as of yet hope this helps
