The complete picture seems to be:
Anne JOYNES born 1846 GRO Q3 Monmouth v26 p89 mother's names JONES. There is no baptism record. Father unknown as Stephen JOYNES (tailor as in 1841 census and Ann JOYNES' wedding) had died in 1844 (GRO Q1 Monmouth v26 p71) aged 40 and buried 29.3.44 at Christchurch (FoD).
Appears in 1851 census aged 4, born in Coleford, as daughter of Elizabeth JOYNES, widow, head of household in Gloucester Road, Coleford.
Does not appear in 1861 census.
In 1871 census appears as Annie JOYNES (genealogy websites transcribe her as JOYMES despite the original being clear), a cook in the household of James A Hirst, a manufacturing chemist aged 24 born in Leeds, living at 1 Hyde Terrace, Leeds West.
On 20.5.1871 Ann JOYNES married Edward SMITHSON at St Andrews Church, Leeds (GRO Q2 Leeds v9b p470). He signs as Edward although all other records show him to be Edwin. The marriage register spells her name as JOYENS although she signs it JOYNES. This confusion with the spelling of her name is repeated at GRO with the births of 4 of her children. Edwin SMITHSON was born in 1847 (GRO Leeds v23 p485, mother's name not given, so it may have been SMITHSON, therefore possibly being illegitimate. This means that neither Ann nor Edwin/Edward may have known their fathers.
In 1881 census Ann SMITHSON, aged 35 born in Coleford, is living with her husband and 5 children (Louisa, Lavinia, Frederick, Annie Eliza and Ada) at 24 Marlborough Street, Leeds.
In 1891 census Ann SMITHSON, aged 45 born in Coleford, is living with her husband and 6 children (all 1881 plus John Edward) at 64 Marlborough Street, Leeds.
In 1901 census Ann SMITHSON, aged 55 born in Coalford, is living with her husband and 5 children at 59 Chatham Street, Leeds.
In 1911 census Anne SMITHSON, aged 64 born in Coleford, is living with her husband and 3 children at 59 Chatham Street, Leeds. She had been married for 42 and had had 6 children, one of whom had died before 1911, but unable to determine which of the 1891 6 children had died (not Frederick, but Louisa and Ada may have married: too many options to identify them).
Anne SMITHSON died in 1922 (GRO Q1 Leeds v9b p561) aged 75 (=1847).
Edwin SMITHSON died in 1927 (GRO Q2 Leeds v9b p362) aged 79 )=1847)

Emma JOYNES as a servant aged 14 in Coleford in the 1861 census is a possibility as being Anne JOYNES as there is no birth of an Emma JOYNES registered at Monmouth 1846-48.
