I suggest this is John's burial, from this site's PRs;

Before finding this PR I searched all "John Morgan" Burials in Monmouth District during 1880-1891 on FreeBMD and this was the closest match age-wise. Now I see the precise location fits too, his widow Daramis was living in Pillowell at 1891 Census.

But why wasn't he on 1851 Census with the family ? Perhaps he dies before 1851 ?

How about, probably much more likely I think.
Old Croft is only 1/2 mile from Pillowell/Yorkley so seems to fit the family's home area from 1851 etc Census'.
Please do you have the household's place of residence for the 1841 Census, to compare against ??
