Firstly, regarding the 1861 Census, it is possible that the William Davis Lodger aged 4 could in fact be the illegitimate son of Eliza Davis his wife, born 2 years before she married George Meek.
Answering your 3rd question, I am not directly related to Amelia 1821 (but see below), I used to be but a change to my family tree regarding her parents Joseph Meek & Hannah Baldwin removed that relationship. I am however still related to descendants of Joseph Meek & Hannah Baldwin. Indeed I am related via Amelia nee Meek's daughter Amelia nee Goode's own daughter Gertrude Helen Read, who married my half second cousin 3 times removed William Ernest Marfell born 29 Apr 1878.
I have never investigated Richard Goode who married Amelia Jane Meek 1821, however I note there is a baptism of a Richard Goode 19 Apr 1812 Newent to parents James Goode & Ann. Now I do have a 2nd cousin 5 times removed James Goode 1770 who married Ann Harper 1771 on 16 Nov 1793. They could well have been his parents.
