There certainly seems some doubt about her dob, on the 1891 census, she is recorded as b 1845 and she has a son, Albert aged 14 birth place not known but not Francis's son as Albert is shown as 'wife's son.' Perhaps she was married before to a Lucas?

I can not see a baptism on this site for this Sarah.

The marriage certificate of Sarah to Francis Chapman should give her father's name and occupation, which will assist further research.
