There were a few Walter Gundys around the UK at that time, but sadly neither FindMyPast nor FamilySearch seems to know your Walter's parents, altho they have baptisms for Walter & Betty/Elizabeth's children which I suspect you already have.
FindMyPast also has the following transcribed record that may be new to you,

By the way, I think you've made an error wrt his Burial Record, I've made the same mistake myself more than once, it's 10 March 1826, see;

Using FamilySearch to look for all "GUNDY" births in Herefordshire c1769ish, there appears to be two or even 3 distinct family groups.
1) Christenings in "Ross" for Catherine 1751, John 1754, Sarah 1756, Anne 1759, Hannah 1760, all to parents WALTER and Sarah Gundy.
Before that and also in "Ross" were Elisabeth 1731, Anne & Hester January 1736, Hannah 1740 and William 1743, all to parents Walter & Hannah Gundy.
(Another Walter, in Dymock in 1726, to parents Walter & Hannah Gundy).
2) Christenings in "Upton Bishop" for Ann 1744, Alice 1746, Elisabeth 1749, Mary 1752, Stephen 1754, John 1754, Sarah 1756, all to parents Stephen and Elisabeth Gundy.

APART from the much-later 1788 Marriage Record given by Slowhands in his earlier post, which sadly doesn't give clues to Walter's parents, altho it's likely that witnesses John & Thomas Davies are related to bride Elizabeth (father & brother, maybe ??); this is the ONLY marriage I can find for an earlier Walter Gundy from same general area and timescale as the above christening records;

Based on the above, and circumstantial I know, but I suspect your Walter born 1759 was child to Walter and Sarah Gundy, probably in Ross.
