I'll take a good look at the Herefordshire FHS site and will make contact with my fellow researcher.
As for the wills, they've already been of great assistance. The problem with large families recycling the same names over and over is that you're never 100% sure you're looking at the right person. Something like a will which might tell you a sibling or a child's name is great for filling in the gaps!
That being said I did find myself spending a full day trying to decipher the Will of William Ambrey of English Bicknor (1824ish) the other day - about 8 pages of longhand legalese in crabby handwriting. That was a low point in the search!
