CLEARLY, and as you so correctly say, more Census info is needed here...

Fortunately for us the excellent & highly recommended Longhope Village Website carries free-to-access Census Information from 1851 onwards, their transcript of the 1851(?? SEE NOTE BELOW!) Census shows eight Sterry households in the village, I think this is your George and his family;

Note the Baptism is at Taython, very near Longhope; Eliza's home Parish as shown by the Census records and her marriage record.


UPDATE !.
It seems the Longhope website displays better on web-browsers more recent than mine, having just checked on my son's pc which is much easier to read..
I think the above birthyear, 1833, is correct for George son of James & Eliza. The Longhope Census data for this particular one of the many Longhope Sterry/Sterrey households is consistent thro the 1851 & 1861 census, showing George b1833. It seems he's not in Longhope on the 1871, and the 1881 shows him married and aged 40 as per the original post-so not unusually he's lost a few years in his later years..
